Not all vegetables and greens take months to harvest. If you want results in the shortest time possible and are wondering which vegetables grow the fastest, you can choose vegetable varieties that give you fruit in a short time, without waiting from spring to autumn.

Here are the fastest growing vegetables:

radishes

Some of the fastest growing vegetables are radishes. Most radish varieties are ready to harvest within 25 to 30 days of planting. They can be planted in the greenhouse from the first days of spring.

Lettuce or salad greens can be harvested about 30 days after planting the seedlings. There are many varieties of lettuce, such as watercress or red lettuce. It is easy to maintain and ranks, along with radishes, green onions and garlic, among the first crops of the year.

Pumpkins

Pumpkins, including courgettes, are ready to harvest 70 days after planting. Young pumpkins are the most tender and delicious, so you should harvest them when they are small. If they reach maturity they will have seeds and hard skin.

Cucumbers

Most varieties of cucumbers begin to bear fruit 50-70 days after planting. Once fruited, the formed cucumbers grow very quickly and must be harvested when they are still small, otherwise they will have hard seeds and bitter skin.
